Description5-Oxooctadecanoic acid, also known as 5-ketostearic acid, belongs to the class of organic compounds known as long-chain fatty acids. These are fatty acids with an aliphatic tail that contains between 13 and 21 carbon atoms. 5-Oxooctadecanoic acid is a very hydrophobic molecule, practically insoluble (in water), and relatively neutral. Outside of the human body, 5-Oxooctadecanoic acid has been detected, but not quantified in, milk and milk products. It was first documented in 2000 (PMID: 11413487). This could make 5-oxooctadecanoic acid a potential biomarker for the consumption of these foods (PMID: 16902246) (PMID: 17374880) (PMID: 20044567).
