These are fatty alcohols that have an aliphatic tail of 13 to 21 carbon atoms. Thus, 1,20-eicosanediol is considered to be a fatty alcohol lipid molecule. 1,20-Eicosanediol is a very hydrophobic molecule, practically insoluble (in water), and relatively neutral. Outside of the human body, 1,20-Eicosanediol has been detected, but not quantified in, pomes. This could make 1,20-eicosanediol a potential biomarker for the consumption of these foods.
