| Description | Glycerol 1,3-di-(9Z,12Z-octadecadienoate) 2-octadecanoate, also known as a,a'-dilinoleostearin, belongs to the class of organic compounds known as triacylglycerols. These are glycerides consisting of three fatty acid chains covalently bonded to a glycerol molecule through ester linkages. Glycerol 1,3-di-(9Z,12Z-octadecadienoate) 2-octadecanoate is an extremely weak basic (essentially neutral) compound (based on its pKa). Outside of the human body, Glycerol 1,3-di-(9Z,12Z-octadecadienoate) 2-octadecanoate has been detected, but not quantified in, fats and oils. This could make glycerol 1,3-di-(9Z,12Z-octadecadienoate) 2-octadecanoate a potential biomarker for the consumption of these foods. |
