DescriptionIsosalicin, also known as p-tolunitril or 4-cyanotoluene, belongs to the class of organic compounds known as o-glycosyl compounds. These are glycoside in which a sugar group is bonded through one carbon to another group via a O-glycosidic bond. Isosalicin is an extremely weak basic (essentially neutral) compound (based on its pKa). Outside of the human body, Isosalicin has been detected, but not quantified in, alcoholic beverages and tea. 2-(hydroxymethyl)-6-[(2-hydroxyphenyl)methoxy]oxane-3,4,5-triol is found in Catharanthus roseus, Crepis foetida and Foeniculum vulgare. This could make isosalicin a potential biomarker for the consumption of these foods.
