DescriptionNorcapsaicin belongs to the class of organic compounds known as methoxyphenols. Methoxyphenols are compounds containing a methoxy group attached to the benzene ring of a phenol moiety. Norcapsaicin is an extremely weak basic (essentially neutral) compound (based on its pKa). Outside of the human body, Norcapsaicin has been detected, but not quantified in, several different foods, such as italian sweet red peppers, green bell peppers, orange bell peppers, red bell peppers, and herbs and spices. (5e)-n-[(4-hydroxy-3-methoxyphenyl)methyl]-7-methyloct-5-enimidic acid is found in Capsicum annuum. This could make norcapsaicin a potential biomarker for the consumption of these foods.
