DescriptionPersenone A belongs to the class of organic compounds known as long-chain fatty alcohols. These are fatty alcohols that have an aliphatic tail of 13 to 21 carbon atoms. Thus, persenone a is considered to be a fatty alcohol lipid molecule. Persenone A is a very hydrophobic molecule, practically insoluble (in water), and relatively neutral. Outside of the human body, Persenone A has been detected, but not quantified in, fruits. (+/-)-persenone a is found in Persea americana. This could make persenone a a potential biomarker for the consumption of these foods.
