DescriptionLucuminic acid, also known as lucuminate, belongs to the class of organic compounds known as o-glycosyl compounds. These are glycoside in which a sugar group is bonded through one carbon to another group via a O-glycosidic bond. Lucuminic acid is an extremely weak basic (essentially neutral) compound (based on its pKa). Outside of the human body, Lucuminic acid has been detected, but not quantified in, fruits. phenyl[(3,4,5-trihydroxy-6-{[(3,4,5-trihydroxyoxan-2-yl)oxy]methyl}oxan-2-yl)oxy]acetic acid is found in Pouteria sapota. This could make lucuminic acid a potential biomarker for the consumption of these foods.
