DescriptionN-Isobutyl-2,4,8,10,12-tetradecapentaenamide, also known as g-sanshool, belongs to the class of organic compounds known as n-acyl amines. N-acyl amines are compounds containing a fatty acid moiety linked to an amine group through an ester linkage. Thus, N-isobutyl-2,4,8,10,12-tetradecapentaenamide is considered to be a fatty amide lipid molecule. N-Isobutyl-2,4,8,10,12-tetradecapentaenamide is a very hydrophobic molecule, practically insoluble (in water), and relatively neutral. Outside of the human body, N-Isobutyl-2,4,8,10,12-tetradecapentaenamide has been detected, but not quantified in, herbs and spices. (2e,4e,8e,10e,12e)-n-(2-methylpropyl)tetradeca-2,4,8,10,12-pentaenimidic acid is found in Zanthoxylum piperitum. This could make N-isobutyl-2,4,8,10,12-tetradecapentaenamide a potential biomarker for the consumption of these foods.
