Description5-Dodecyldihydro-2(3H)-furanone, also known as 4-dodecyl-g-butyrolactone or 4-hexadecanolide, belongs to the class of organic compounds known as gamma butyrolactones. Gamma butyrolactones are compounds containing a gamma butyrolactone moiety, which consists of an aliphatic five-member ring with four carbon atoms, one oxygen atom, and bears a ketone group on the carbon adjacent to the oxygen atom. 5-Dodecyldihydro-2(3H)-furanone is an extremely weak basic (essentially neutral) compound (based on its pKa). Outside of the human body, 5-Dodecyldihydro-2(3H)-furanone has been detected, but not quantified in, a few different foods, such as fruits, parsnips, and root vegetables. This could make 5-dodecyldihydro-2(3H)-furanone a potential biomarker for the consumption of these foods.
