DescriptionMethyl (Z)-3-hexenoate, also known as fema 3364 or methyl hex-3-enoate, belongs to the class of organic compounds known as fatty acid methyl esters. Fatty acid methyl esters are compounds containing a fatty acid that is esterified with a methyl group. They have the general structure RC(=O)OR', where R=fatty aliphatic tail or organyl group and R'=methyl group. Methyl (Z)-3-hexenoate is a very hydrophobic molecule, practically insoluble (in water), and relatively neutral. Methyl (Z)-3-hexenoate is a slightly fruity, sweet, and earthy tasting compound. Outside of the human body, Methyl (Z)-3-hexenoate has been detected, but not quantified in, fruits. This could make methyl (Z)-3-hexenoate a potential biomarker for the consumption of these foods. (3z)-methyl 3-hexenoate is found in Ananas comosus and Nicotiana tabacum. Minor constituent of pineapples, also found in soursop (Annona muricata) and mountain papaya (Carica pubescens).
