Butyl heptanoate is a very hydrophobic molecule, practically insoluble (in water), and relatively neutral. Butyl heptanoate is an apple, cut grass, and fruity tasting compound. Outside of the human body, Butyl heptanoate has been detected, but not quantified in, pomes. butyl heptanoate is found in Angelica gigas. This could make butyl heptanoate a potential biomarker for the consumption of these foods.
