DescriptionMarmeline belongs to the class of organic compounds known as phenol ethers. These are aromatic compounds containing an ether group substituted with a benzene ring. Marmeline is a strong basic compound (based on its pKa). Outside of the human body, Marmeline has been detected, but not quantified in, fruits. (2z)-n-(2-hydroxy-2-{4-[(3-methylbut-2-en-1-yl)oxy]phenyl}ethyl)-3-phenylprop-2-enimidic acid is found in Aegle marmelos. This could make marmeline a potential biomarker for the consumption of these foods.
