DescriptionItalidipyrone belongs to the class of organic compounds known as alkyl-phenylketones. These are aromatic compounds containing a ketone substituted by one alkyl group, and a phenyl group. Italidipyrone is an extremely weak basic (essentially neutral) compound (based on its pKa). Outside of the human body, Italidipyrone has been detected, but not quantified in, herbs and spices and tea. 6-ethyl-3-({3-[(6-ethyl-4-hydroxy-5-methyl-2-oxopyran-3-yl)methyl]-2,4,6-trihydroxy-5-(2-methylbutanoyl)phenyl}methyl)-4-hydroxy-5-methylpyran-2-one is found in Helichrysum italicum. This could make italidipyrone a potential biomarker for the consumption of these foods.
