| Description | Bargustanine belongs to the class of organic compounds known as benzylisoquinolines. These are organic compounds containing an isoquinoline to which a benzyl group is attached. Bargustanine is a very strong basic compound (based on its pKa). Outside of the human body, Bargustanine has been detected, but not quantified in, tea. 4-[hydroxy({7-hydroxy-6-methoxy-8-[(6-methoxy-2-methyl-3,4-dihydro-1h-isoquinolin-7-yl)oxy]-2-methyl-3,4-dihydro-1h-isoquinolin-1-yl})methyl]benzene-1,2-diol is found in Berberis vulgaris. This could make bargustanine a potential biomarker for the consumption of these foods. |
