These are fatty acids in which the chain bears a hydroxyl group. 2,3-Dimethyl-3-hydroxyglutaric acid was first documented in 1983 (PMID: 6133567). 2,3-Dimethyl-3-hydroxyglutaric acid is a very hydrophobic molecule, practically insoluble (in water), and relatively neutral.
