DescriptionAscorbalamic acid, also known as ascorbalamate, belongs to the class of organic compounds known as proline and derivatives. Proline and derivatives are compounds containing proline or a derivative thereof resulting from reaction of proline at the amino group or the carboxy group, or from the replacement of any hydrogen of glycine by a heteroatom. Ascorbalamic acid is an extremely weak basic (essentially neutral) compound (based on its pKa). Outside of the human body, Ascorbalamic acid has been detected, but not quantified in, brassicas. Ascorbalamic acid is found in Brassica oleracea . This could make ascorbalamic acid a potential biomarker for the consumption of these foods.
