DescriptionEuropinidin belongs to the class of organic compounds known as 5-o-methylated flavonoids. These are flavonoids with methoxy groups attached to the C5 atom of the flavonoid backbone. Thus, europinidin is considered to be a flavonoid lipid molecule. Europinidin is a very hydrophobic molecule, practically insoluble (in water), and relatively neutral. It is a water-soluble, bluish red plant dye. It is a rare O-methylated flavonoid, a derivative of delphinidin. Europinidin (Eu) is an O-methylated anthocyanidin. Europinidin is found in Ceratostigma plumbaginoides and Plumbago europaea . It can be found in some species of Plumbago and Ceratostigma.
