DescriptionSophorotriose belongs to the class of organic compounds known as oligosaccharides. These are carbohydrates made up of 3 to 10 monosaccharide units linked to each other through glycosidic bonds. Sophorotriose is an extremely weak basic (essentially neutral) compound (based on its pKa). Outside of the human body, Sophorotriose has been detected, but not quantified in, a few different foods, such as alcoholic beverages, potato, and pulses. Sophorotriose is found in Papiliotrema laurentii. This could make sophorotriose a potential biomarker for the consumption of these foods.
