| Description | 3,5-Dimethyl-2-propylpyrazine, also known as 2-propyl-3,5(3,6)-dimethylpyrazine, belongs to the class of organic compounds known as pyrazines. Pyrazines are compounds containing a pyrazine ring, which is a six-member aromatic heterocycle, that consists of two nitrogen atoms (at positions 1 and 4) and four carbon atoms. 3,5-Dimethyl-2-propylpyrazine is a moderately basic compound (based on its pKa). 3,5-Dimethyl-2-propylpyrazine is a burnt and hazelnut tasting compound. Outside of the human body, 3,5-Dimethyl-2-propylpyrazine has been detected, but not quantified in, a few different foods, such as cocoa and cocoa products, crustaceans, and nuts. 3,5-Dimethyl-2-propylpyrazine is found in Corynebacterium glutamicum. This could make 3,5-dimethyl-2-propylpyrazine a potential biomarker for the consumption of these foods. |
