Allyl thiohexanoate is an extremely weak basic (essentially neutral) compound (based on its pKa). Allyl thiohexanoate is a fruity and sulfurous tasting compound. Outside of the human body, Allyl thiohexanoate has been detected, but not quantified in, onion-family vegetables. This could make allyl thiohexanoate a potential biomarker for the consumption of these foods.
