These are carboxylic ester derivatives of a fatty acid. Ethyl (E)-2-octenoate is a very hydrophobic molecule, practically insoluble (in water), and relatively neutral. Ethyl (E)-2-octenoate is a fatty, fruity, and green tasting compound. Outside of the human body, Ethyl (E)-2-octenoate has been detected, but not quantified in, asian pears and pears. This could make ethyl (e)-2-octenoate a potential biomarker for the consumption of these foods.
