DescriptionBeta-Carotinal, also known as apocarotenal or β-carotinal, belongs to the class of organic compounds known as triterpenoids. These are terpene molecules containing six isoprene units. Beta-Carotinal is an extremely weak basic (essentially neutral) compound (based on its pKa). Outside of the human body, beta-Carotinal has been detected, but not quantified in, several different foods, such as citrus, eggs, green vegetables, and sweet oranges. beta-Carotinal is found in Dracaena draco , Lavandula angustifolia and Pandanous amryllifolius. This could make beta-carotinal a potential biomarker for the consumption of these foods.
