DescriptionPentyl hexanoate, also known as amyl caproate or 12-tricosanone, belongs to the class of organic compounds known as fatty acid esters. These are carboxylic ester derivatives of a fatty acid. Pentyl hexanoate is a very hydrophobic molecule, practically insoluble (in water), and relatively neutral. Pentyl hexanoate is a sweet, apple, and estery tasting compound. Outside of the human body, Pentyl hexanoate has been detected, but not quantified in, a few different foods, such as asian pears, pineapples, and soursops. Pentyl hexanoate is found in Heracleum dissectum and Polygala senega. This could make pentyl hexanoate a potential biomarker for the consumption of these foods.
