DescriptionHebevinoside IV belongs to the class of organic compounds known as cucurbitacin glycosides. These are polycyclic compounds containing a carbohydrate derivative glycosidically linked to a curcubitane nucleus. Hebevinoside IV is an extremely weak basic (essentially neutral) compound (based on its pKa). Outside of the human body, hebevinoside IV has been detected, but not quantified in, mushrooms. Hebevinoside IV is found in Hebeloma vinosophyllum and Hebeloma vinosphyllum. This could make hebevinoside IV a potential biomarker for the consumption of these foods.
