Description3,5-Dimethyl-2-vinylpyrazine, also known as bis(2-nitrophenyl)sulfilimine, belongs to the class of organic compounds known as pyrazines. Pyrazines are compounds containing a pyrazine ring, which is a six-member aromatic heterocycle, that consists of two nitrogen atoms (at positions 1 and 4) and four carbon atoms. 3,5-Dimethyl-2-vinylpyrazine is a moderately basic compound (based on its pKa). 3,5-Dimethyl-2-vinylpyrazine is an earthy and musty tasting compound. Outside of the human body, 3,5-Dimethyl-2-vinylpyrazine has been detected, but not quantified in, coffee and coffee products. This could make 3,5-dimethyl-2-vinylpyrazine a potential biomarker for the consumption of these foods.
