DescriptionHebevinoside XI belongs to the class of organic compounds known as cucurbitacin glycosides. These are polycyclic compounds containing a carbohydrate derivative glycosidically linked to a curcubitane nucleus. Hebevinoside XI is an extremely weak basic (essentially neutral) compound (based on its pKa). Outside of the human body, hebevinoside XI has been detected, but not quantified in, mushrooms. Hebevinoside XI is found in Hebeloma vinosophyllum and Hebeloma vinosphyllum. This could make hebevinoside XI a potential biomarker for the consumption of these foods.
