Description5,6,7,8-Tetrahydroquinoxaline, also known as cyclohexapyrazine or fema 3321, belongs to the class of organic compounds known as pyrazines. Pyrazines are compounds containing a pyrazine ring, which is a six-member aromatic heterocycle, that consists of two nitrogen atoms (at positions 1 and 4) and four carbon atoms. 5,6,7,8-Tetrahydroquinoxaline is a moderately basic compound (based on its pKa). 5,6,7,8-Tetrahydroquinoxaline is a bean, cereal, and cheese tasting compound. Outside of the human body, 5,6,7,8-Tetrahydroquinoxaline has been detected, but not quantified in, several different foods, such as cereals and cereal products, cocoa and cocoa products, coffee and coffee products, and nuts. This could make 5,6,7,8-tetrahydroquinoxaline a potential biomarker for the consumption of these foods.
