DescriptionHexyl formate, also known as hexyl formic acid or fema 2570, belongs to the class of organic compounds known as carboxylic acid esters. These are carboxylic acid derivatives in which the carbon atom from the carbonyl group is attached to an alkyl or an aryl moiety through an oxygen atom (forming an ester group). Hexyl formate is an extremely weak basic (essentially neutral) compound (based on its pKa). Hexyl formate is a sweet, apple, and banana tasting compound. Outside of the human body, Hexyl formate has been detected, but not quantified in, several different foods, such as tea, pomes, peachs, root vegetables, and apples. Hexyl formate is found in Glycyrrhiza glabra. This could make hexyl formate a potential biomarker for the consumption of these foods.
