These are fatty acids with an aliphatic tail that contains between 4 and 12 carbon atoms. 3-Octenoic acid is a very weakly acidic compound (based on its pKa). 3-Octenoic acid is a fatty and oily tasting compound. Outside of the human body, 3-Octenoic acid has been detected, but not quantified in, burdocks. This could make 3-octenoic acid a potential biomarker for the consumption of these foods.
