Zeta-Carotene epoxide is an extremely weak basic (essentially neutral) compound (based on its pKa). Outside of the human body, zeta-Carotene epoxide has been detected, but not quantified in, garden tomato. This could make zeta-carotene epoxide a potential biomarker for the consumption of these foods. |
