DescriptionWyerone epoxide belongs to the class of organic compounds known as furanoid fatty acids. These are fatty acids containing a 5-alkylfuran-2-alkanoic acid. Wyerone epoxide is an extremely weak basic (essentially neutral) compound (based on its pKa). Outside of the human body, Wyerone epoxide has been detected, but not quantified in, broad beans and pulses. This could make wyerone epoxide a potential biomarker for the consumption of these foods.
